Ingredients:
- 1 cup toasted chopped pecans
- 1 cup sweetened condensed milk
- 3/4 teaspoons almond extract
- 3/4 teaspoons coconut extract
- 8 ounces sweetened shredded coconut
- 12 oz. chocolate flavored almond bark, melted
- 1 tablespoon shortening
Directions:
- In a bowl mix together the pecans, condensed milk, almond & coconut extract and shredded coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest in the refrigerator for 1-2 hours.
- After the balls have set up, melt the chocolate and shortening until smooth. Using a toothpick, dip the coconut balls into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.
