Ingredients: Makes 2 dozen
- 3 candy canes, crushed
- 1/2 cup butter flavored shortening, (I used Butter Crisco)
- 1 cup sugar
- 1/2 teaspoon vanilla extract
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 1/2 cups cake flour
- 1/2 cup powdered sugar
Directions:
- Preheat oven to 350 degrees. Grease baking sheet with non-stick cooking spray or line with parchment paper.
- Place candy canes into a plastic storage bag and crush using a rolling pin. Set aside.
- In a large mixing bowl, cream butter flavored shortening and sugar together until light and fluffy. Whip in vanilla extract and egg. Scrape sides down and mix again.
- In a small bowl combine salt, baking powder and cake flour. Pour into mixer and slowly mix until just combined. Scrape sides of bowl and briefly mix again.
- Stir in crushed candy canes.
- Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
- Bake for 9-11 minutes or until bottoms are barely light brown. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.
